A beautiful collaboration with GoodLot Farmstead Brewing Co. A dish inspired by flavours of Vietnamese Chicken and Chinese Drunken Chicken–a beautiful mix of cultures.

The star of the show is the Bighead Amber by GoodLot! The wings are brined in the beer, cooked in the beer, and the beer is also used to finish the final sauce! The complex notes of citrus and pine from the Ontario hops make the Vietnamese chicken sauce shine!

1lbs Fully cooked wings, freshly frozen.

Ingredients

Chicken, lemongrass, kaffir lime leaf, spices, onion, garlic, scallions, ginger, fish sauce, 7up, sugar, coconut milk, salt, Bighead Amber (beer).

Instructions

Defrost fully in the fridge, set aside the sauce packet for dressing at the end. 

Oven Prep-time 10-15 mins

  1. Pre-heat your oven to 400F. 
  2. Mix the wings in the bag without opening the bag to redistribute the sauce. Open and place on a tray 1 inch apart and then into the oven.
  3. Cook for 5 mins and turn oven to broil. Caramelized the chicken wings for 2 mins. Flip the wings and broil for 2 mins again.  
  4. While wings are still hot, place them into a large bowl and pour the sauce packet on the wings and toss.
  5. Grab a cold Goodlot Beer and enjoy. 

BBQ Prep-time 10-15mins 

  1. Pre-heat your BBQ to 350-400F.
  2. Place a well oiled foil down to prevent any sticking. Grill the wings until all sides are evenly caramelized and hot.
  3. While wings are still hot, place them into a large bowl and pour the sauce packet on the wings and toss.
  4. Grab a cold GoodLot beer and enjoy
